Brie cheese: from the tables of kings, to the Torockoi Factory!

Brie is one of the most consumed, as well as one of the oldest, cheeses in the world. It is a French cheese, originating specifically from the Seine-et-Marne region in northern France, which also bears the historical name of Brie. Brie, the favorite of French kings The first mentions of this cheese date back to the 8th century. An old legend says that Emperor Charlemagne tasted this cheese in a monastery in the town of Reuil-en-Brie, in the Seine-et-Marne region of northern France. He was so impressed by this creamy and flavorful product that he requested his new discovery to become a staple in his daily menu. Another legend of Brie cheese appears in the Middle Ages, specifically in the 13th century. It claims that King Louis XVI and Marie Antoinette would stop at an inn near the town of Meaux, in the Seine-et-Marne region, to taste the buttery center of a type of white-mold cheese one last time. Brie, the newest product from the Torockoi Dairy Factory Brie, the newest product from the Torockoi Dairy Factory Even though it has its origins in France, Brie is now produced in many other countries, being one of the best-known and most consumed types of mold-ripened cheese in the world. For this reason, it seemed natural to us that it should be part of the cheese catalog of the Torockoi Dairy Factory. "The cheese is a semi-soft cheese that requires a 45-day maturation period. It is available in 300-gram blocks, and the white mold rind is edible," states Robert Szakacs, Executive Director of the Torockoi Dairy Factory. This is the newest cheese variety produced by the dairy factory in Colțești, Alba County, having been launched on the market only at the beginning of 2019. How can we enjoy Torockoi Brie? Blocks of Torockoi Brie Inside, Torockoi Brie is white, soft, and slightly glossy, while on the outside, it is covered with a layer of white mold that can be eaten. The cheese's maturation period is approximately 45 days, and when it is ready for consumption, it has a slightly piquant aroma. There are many ways to enjoy Torockoi Brie: as it is – on cheese platters, and it pairs perfectly with various types of nuts or fresh or dried fruits; in sandwiches, alongside beef pastrami; slightly melted on toast; baked in the oven in a ceramic dish; in terms of wines, it is recommended to pair it with a dry or semi-dry white wine. Why is aged cheese a healthy choice?

Aged cheese is often considered a culinary delicacy, prized for its unique taste. However, beyond its flavor, this cheese also offers significant health benefits. In the following lines, we will explore 6 reasons why aged cheeses should be a part of your daily diet. 1. High content of calcium and protein Aged cheese is an excellent source of calcium, a mineral essential for maintaining bone and tooth health. The aging process not only intensifies the flavor of the cheeses but also increases their calcium concentration. Thus, they become more nutritionally rich and are more suitable for a balanced diet. Furthermore, aged cheeses are rich in high-quality proteins, which are essential for repairing and maintaining muscle mass. 2. Increased digestibility One of the major advantages of consuming aged cheese is its digestibility. As the cheese matures, lactose is broken down, which makes these cheeses easier to digest, even for people with lactose intolerance. Additionally, enzymes and beneficial bacteria resulting from the aging process can contribute to better digestion. 3. Natural sources of probiotics Aged cheese is often rich in probiotics, bacteria that help maintain a balanced gut flora. A healthy digestive system is essential for immunity, nutrient absorption, and the prevention of digestive diseases. Regular consumption of aged cheeses can contribute to optimal gut health. 4. Natural antioxidants and essential vitamins In addition to calcium and protein, aged cheese also contains essential vitamins such as A, D, B2, and B12. These vitamins play a very important role in maintaining the health of the skin, eyes, nervous system, and immune system. Also, the antioxidants present in these cheeses help fight free radicals, protecting the body from oxidative stress and premature aging. 5. Lasting feeling of satiety Due to their high content of healthy fats and proteins, aged cheeses provide a long-lasting feeling of satiety. This can help reduce appetite and prevent unhealthy snacking between meals, thereby contributing to maintaining a healthy body weight. 6. Intense aroma, moderate consumption Aged cheese has a much more intense aroma than fresh ones, which means you can consume a smaller amount to enjoy the same pleasure of taste. This not only helps you control portions but also allows you to enjoy a quality food in moderate quantities. They also add a wonderful taste to any dish, without the need to use many additional spices.   So, as you can see, aged cheese is more than just a culinary treat. It is a healthy choice for a balanced diet. With a rich content of essential nutrients, probiotics, and antioxidants, this cheese offers numerous benefits for bone health, digestion, and immunity.
