When you order cheese from De Colțești, you support three families from the Apuseni Mountains.
In the Trascău Mountains, good things are done with patience. Here, mornings start early, with well-cared-for animals, freshly milked milk, and people who know that their work lives on in every product that reaches people's tables.
At De Colțești, we believe that cheese is more than just a product. It is the result of an entire community. Behind every piece of cheese are the people, households, and families who carry on a tradition that is generations old.
The milk begins the story
Everything starts with the milk. The milk we use comes from animals raised in nearby households, from people who know their animals and care for them responsibly. For them, raising animals is not just an economic activity, but a way of life. It is daily work, done with care and respect for nature.
From milk, into human hands
After the milk reaches us, another chapter of the story begins. This is where our team comes in, transforming milk into cheese using recipes preserved and passed down through time. The process is not rushed. Each product needs its own time to reach exactly where it should be: in balance, in taste, in texture. It is work done with patience and respect for what nature provides.
The community behind every product
But perhaps the most important thing is this: Behind every order is a community. Every time someone chooses to buy De Colțești cheese, they are not just supporting a dairy. They are also supporting the people who make this story possible. So we like to put it simply:
an order on the De Colțești website helps three families in the Apuseni Mountains.
The family that raises the animals. The family that turns the milk into cheese. And the family that carries this craft forward. It is a chain of people, work, and tradition.
More than just a cheese
For us, every product tells a story. A story about the mountains, about people, about patience, and about the continuity between generations. And when the products reach your table, this story continues.
That is why we are grateful to you.
Because, every time you choose De Colțești cheeses, you are not just bringing an authentic taste to your table. You are helping an entire community continue its journey.
And perhaps that is one of the most beautiful things food can do: to keep people together.

De Colțești kneaded cheese, in the Top 100 cheeses in the world
A place that honors us and compels us to stay the same
A few days ago, we received some news that sincerely delighted us and gave us pause at the same time: the Colțești "frământată" cheese (kneaded cheese) was included in the Top 100 cheeses in the world, reaching 80th place in a ranking compiled by Taste Atlas, one of the most well-known international platforms dedicated to traditional gastronomy.
What this Top 100 actually means
The ranking created by Taste Atlas gathers cheeses from all over the world, evaluated by specialists, chefs, and consumers based on taste, authenticity, and the connection to the place they come from. Making it into such a list doesn't just mean the product is good, but that it tells a recognizable story, one that crosses borders and cultures.
For us, the fact that a kneaded cheese, made in Colțești from local milk and using a traditional process, stands alongside some of the world's most famous cheeses is confirmation that simplicity and honesty still have a place on people's tables.
Kneaded cheese – a product of time
Kneaded cheese is a simple product. It is, however, a product that requires time and attention at every stage: from the milk chosen to the draining, kneading, and shaping.
It is a cheese that cannot be made in a rush and that does not forgive haste. Its taste is built on balance, on gestures repeated correctly, and on the patience to let things come together on their own. Perhaps that is why it is so tied to the area it comes from and to the way the people here work.
Recognition for more than just a product
This Top 100 is not about a cheese. It is about:
the nearby farms where the milk comes from
the people who raise the animals cleanly
the hands that work daily
the choices made over time, even when it would have been easier otherwise
It is recognition of a way of doing things that does not seek shortcuts and does not align with passing trends.
What this placement tells us about the future
We are happy, it honors us, and it makes us responsible. Because, beyond pride, this place in the Top 100 reminds us why we started and why it is important to remain consistent.
We do not intend to change our kneaded cheese to be "more modern" or "more spectacular." We intend to keep it the same, to respect the process, the time, and the taste that brought it here.
Because, sometimes, the best thing you can do is to change nothing at all.
Thank you
We thank everyone who chooses our products, who puts them on their table, and who carries forward simple tastes, made with time. This place in the Top 100 belongs to you, too.
We remain here, in Colțești, working with love, just as we know how.

On time, cheese, and how we relate to food
We live at a pace that has taught us to rush almost everything.
Decisions, meals, breaks, even the moments that should bring us peace. Eating has become, most of the time, a secondary activity... something we do between things, not a thing in itself.
And yet, the way we eat says a lot about the way we live.
Not just what we choose to put on the table, but especially how we do it: whether we sit down or eat standing up, whether we chew or swallow on the run, whether we are present or our thoughts are elsewhere. All these seemingly minor details profoundly influence our relationship with food and, by extension, with our own body.
The body does not function in a rush
Digestion is not a mechanical process, triggered automatically by the mere presence of food. It is a complex process, coordinated by the nervous system, which functions optimally only when the body is in a state of calm and safety.
When we eat in a rush, with fragmented attention and a tense body, the organism remains in a state of subtle alert. In this state, the priority is not digestion, but rapid adaptation to stress. Digestive enzymes are secreted with more difficulty, nutrient absorption is less efficient, and satiety signals arrive with a delay.
In other words, it is not time that slows down digestion. The lack of time blocks it.
Cheese, a food that demands a pause
Cheese is a nutritionally dense food, rich in proteins and fats, intended to nourish and provide satiety. Through its structure, its aging process, and its concentration of nutrients, cheese is not a fast-food item, but one that requires attention and rhythm.
Consumed slowly, chewed well, and integrated into a balanced meal, cheese offers stable energy, supports a feeling of sufficiency, and allows the body to properly utilize nutrients. The taste develops gradually, and satiety occurs naturally.
Consumed in a rush, however, even quality foods lose some of their value. Cheese becomes “just something to eat,” not real nourishment. The pleasure of the taste fades, and the body no longer recognizes the moment when it is enough.
Time as an essential element of nutrition
There is a direct link between the time dedicated to eating and the way the body responds to it. It is about a simple principle: the body needs time to receive food the way it was intended.
Eating slowly is one of the oldest forms of self-regulation of the organism. When we give it time, the body knows what to do: to digest, to absorb, to stop.
The way we eat becomes a reflection of the way we relate to ourselves: whether we listen to ourselves or push ourselves.
Good cheese needs time. So do we.
Quality cheese cannot be rushed. It needs time to be made, to mature, to develop its texture and taste. This time is not a technical detail, but the essence of the process.
Likewise, the body needs time to receive food correctly. Our relationship with nutrition needs time to remain balanced and healthy.
That is why, for us, time is a principle that stands at the foundation of how we produce, eat, and live.
A choice for 2026
In a world that has turned speed into a virtue, slowing down becomes a conscious act. Out of respect for the body, for food, and for life lived, not wasted.
In 2026, we choose to talk about time as a real necessity: in nutrition, in the relationship with food, and, furthermore, in the way we relate to ourselves.
Because the things that do us good cannot be rushed.
Neither is cheese.Neither is the body.Neither is life.

What makes us different? The taste, the people, and the way we do things.
For over 30 years, De Colțești has meant more than just cheese. It means a family of people who have dedicated their lives to a true taste.
We have grown, we have modernized, we have gone through many changes, but one thing has remained unchanged: the way we do things — with heart.
The taste that hasn't changed
In a world where recipes are adapted to follow trends, we have remained anchored in authenticity. Our cheeses are made from milk from nearby farms, with care and patience. We don't add anything extra, we don't leave anything out.
Just good milk, skilled people, and a carefully crafted process — to create clean cheese, with a full taste and an honest story.
A family business, a team spirit
We have learned that it's not just milk that makes good cheese, but also the people who make it. Some have been working with us for a lifetime, others have grown up here, among wheels of cheese and mountain vistas.
Perhaps that is why our cheeses always have wonderful people at their heart.
State-of-the-art technology, old-school soul
We have brought modern equipment into the factory, perfected our processes, and raised quality standards. But we haven't let technology take away our essence. Everything is done with attention, with respect for the milk, for the place we come from, and for those who put our cheese on their table.
De Colțești – The taste that remained clean
Perhaps that’s what makes us different: that we haven't chased trends and we haven't wanted to copy others, but to always remain authentic. We chose to stay sincere, to do things with patience, with respect, and with an open heart. And if, after three decades, the world still recognizes us by our taste, then it means we did a good job.
Because at De Colțești, not only is the cheese aged with care — but so is the story behind it. And we carry this story forward with the same belief:
you are what you eat.
