A place that honors us and compels us to stay the same

A few days ago, we received some news that sincerely delighted us and gave us pause at the same time: the Colțești "frământată" cheese (kneaded cheese) was included in the Top 100 cheeses in the world, reaching 80th place in a ranking compiled by Taste Atlas, one of the most well-known international platforms dedicated to traditional gastronomy.

What this Top 100 actually means

The ranking created by Taste Atlas gathers cheeses from all over the world, evaluated by specialists, chefs, and consumers based on taste, authenticity, and the connection to the place they come from. Making it into such a list doesn't just mean the product is good, but that it tells a recognizable story, one that crosses borders and cultures.

For us, the fact that a kneaded cheese, made in Colțești from local milk and using a traditional process, stands alongside some of the world's most famous cheeses is confirmation that simplicity and honesty still have a place on people's tables.

Kneaded cheese – a product of time

Kneaded cheese is a simple product. It is, however, a product that requires time and attention at every stage: from the milk chosen to the draining, kneading, and shaping.

It is a cheese that cannot be made in a rush and that does not forgive haste. Its taste is built on balance, on gestures repeated correctly, and on the patience to let things come together on their own. Perhaps that is why it is so tied to the area it comes from and to the way the people here work.

This Top 100 is not about a cheese. It is about:

We are happy, it honors us, and it makes us responsible. Because, beyond pride, this place in the Top 100 reminds us why we started and why it is important to remain consistent.

We do not intend to change our kneaded cheese to be "more modern" or "more spectacular." We intend to keep it the same, to respect the process, the time, and the taste that brought it here.

Because, sometimes, the best thing you can do is to change nothing at all.
