Some tastes never grow old. And the people who choose to share them with their loved ones, even less so.

There are moments when food ceases to be merely a sum of ingredients or a biological necessity and becomes pure memory. It becomes about who was sitting next to you at the table, what day of the week it was, how the light fell through the window, and how the air smelled in the kitchen. Crema Focșani is, undoubtedly, one of these gastronomic rarities.

If you grew up in Romania, you probably already know that unique sensation: someone opens a box or unwraps a carefully packed parcel, and suddenly, you feel a shiver. You recognize the smell instantly. You’ve felt it somewhere, sometime. At grandma’s, in the entryway of the house, on a summer morning. In a hurry, on a slice of fresh bread, before running off to play.

Crema Focșani is that cheese you don’t need to explain. You recognize it from a single spoonful.

A history of simplicity: From the sheepfolds of Vrancea to the state nomenclature

To understand the depth of this product, we must go back in time a little. Crema Focșani is not a modern laboratory invention, nor a concept born from a marketing strategy. Its roots are firmly planted in the ancestral tradition of shepherding on the mountain slopes of Vrancea.

History records that, initially, shepherds and farmers in the Focșani area sought a method to transform aged sheep’s milk cheese (caș) into a preparation softer, finer, and creamier than the classic "brânză de burduf." Their solution was as simple as it was brilliant: aged sheep’s milk cheese was finely crumbled, softened with fresh, fatty sour cream, and kneaded extensively with salt until all the noble fats transformed into an unctuous, spreadable, and dense paste.

During the 60s and 70s, the product was standardized and included in the official nomenclature of dairy specialties in Romania. In an era when standardization cut away at the personality of taste, Crema Focșani remained a rare and highly sought-after delicacy. It was not a volume product; it was a prize.

Those who lived through those times certainly remember: when a fresh batch arrived at the grocery store, no radio or newspaper advertisement was needed. Vendors would simply stick a plain, handwritten note on the display window: "We have Crema Focșani!". People would head toward the shelf as if guided by remote control. That note wasn't a commercial announcement. It was good news, and in the Romania of those years, good news was shared immediately with neighbors and family.

Why is it special today? A manifesto for informed consumption

Simple in ingredients, yet extremely profound in taste. That is how all things that have patience in them are. In essence, Crema Focșani is a living food, a direct investment in our primary nutrition.

The slow production process means we don’t use technological shortcuts. The noble protein in the sheep’s milk and the pure fats become, through kneading and natural aging, highly bio-available — meaning they are easy to digest and rich in nutrients that nourish the body from the inside out. In the century of speed and ultra-processed packaging, it remains a benchmark for parents who read the label and make conscious choices for their children.

    Joining the De Colțești family

In 2017, we looked at the Romanian gastronomic landscape and realized that this legendary taste risked disappearing forever, swallowed up by industrial cream cheeses full of stabilizers and thickening gums.

We felt we had a moral duty toward our identity. We decided to bring the old recipe back to life and integrate it into the De Colțești family, under the foothills of the Trascău Mountains.

We changed nothing of what made it sacred: we kept it pure. Only pure sheep’s milk cheese, fatty sour cream, and salt. No additives, no preservatives, no compromises. The same gentle, slow process, the same full taste that nostalgic people have been searching for in markets for decades. Since then and until today, it has remained one of the products people always return to. Not once, but every time they want to put the certainty of quality on the table.

Good food has memory. And it asks to be shared.

This is a truth that sometimes, caught in the daily hustle, we forget: truly good food is not eaten alone. Not because you physically couldn't, but because you simply feel you wouldn't want to.

Crema Focșani has a specific weight of its own — it has the gift of calling people together. When you open a box, the first impulse is to turn to the one next to you and say: "Here, have a taste." In that moment, the meal takes on another meaning. It is no longer a lunch taken in a hurry, in front of a cold screen. It becomes a moment of peace, a space for connection.

Our grandmothers spread it with a spoon over steaming polenta. Mothers stirred it carefully into pasta, rolled it into savory crepes, or placed it over potatoes baked in embers. Every family found its own recipe, its own harmony. But we all have one precious detail in common: someone, sometime, put this taste in front of us for the first time. A loved one. A steady hand. A warm gesture.

At De Colțești, we firmly believe that the future is built on the foundation of things that leave a mark on the soul. We brought Crema Focșani back into the present because we knew that somewhere in this country, someone was still longing for it.

Maybe that someone is you. Or maybe, this weekend, you will place it on the table in front of someone who thought it lost to history and who will realize, with the first spoonful spread on bread, that some memories never fade.
