What we cannot cram onto the label: About the sun, free-roaming pastures, and the people of Trascău
When you pick a De Colțești aged cheese off the shelf, the label tells you the basics: Romanian milk, rennet, salt, maybe some truffles, caraway, or chili. It's correct, it's legal, but it's incomplete.
On a piece of paper of a few square centimeters, there is no way to cram in the reality that actually gives that product its taste. You cannot write about the sun, the foggy mornings at the foot of the Trascău mountains, or the people who do the hard work, day in and day out. So we decided to write here what doesn't fit on the packaging.
The cows are not ours
Online, brands often want to appear as if they do everything perfectly, from A to Z. We prefer to say it directly: we do not have our own farm. And we are proud of that.
The milk we transform into our aged cheeses comes from local farmers in the Trascău area. We work with hardworking people in our community, people who don't keep their animals in industrial confinement, but let them graze freely in pastures. The diverse flora that the cows consume, the clean mountain air, and the natural rhythm of the place transfer directly into the quality of the milk. Basically, they bring us the cleanest ingredient possible, and our duty is not to ruin what nature has already made perfect.
The invisible engine: The sun
Making traditional dairy products does not mean living in the past and rejecting innovation, especially when that innovation protects the very place you call "home."
We chose to invest in solar panels and use green energy to support a good part of our production. We didn't do it to look good in some corporate sustainability report. We did it because it's the only logical, common-sense way to do business here. If you take extraordinary milk from an ecosystem, you are obligated to give back respect. Today, the sun keeps our factory running, and time perfects our taste.
No shortcuts
In a food industry obsessed with huge volumes and delivery speed, we chose to operate on a different time zone. One where a piece of cheese sits on wooden shelves for months, in silence, until it is truly ready.
We don't add magic powders, we don't rush the aging process, and we don't make compromises when demand increases. The meeting of green innovation, clean pasture-fed milk, and the patience of craftsmanship is the only recipe we know.
This autumn, when you open a De Colțești cheese alongside a glass of good wine, remember that you are not just savoring a dairy product. You are savoring the work of an entire community, the clean energy of the sun, and a time that we chose not to rush.

The place where the sun rises twice: How the Trascău Mountains influence the taste of our cheeses
There are places in Romania where time seems to have a different patience, and nature dictates the rhythm of life. One such place lies at the foothills of the Trascău Mountains, known as the place where the sun rises twice. This is not just a spectacular optical illusion that attracts thousands of tourists, but the very heart of our brand, a place of stories and a truly beautiful location. This is where our motto, which we honor every day, originated: "Fairytale dairy from fairytale places."
The secret to the taste: Nature and fresh air
When you savor a slice of our cheese, you are actually tasting a piece of this landscape. The lush pastures and clean mountain air directly influence the quality of the milk. Good cheese begins in the field, in the quiet of the valleys, where animals graze in a natural environment, far from the hustle and pollution of big cities. This harmony with nature transfers directly into the texture and flavor of every product that leaves our factory.
Made by people, not robots
In an increasingly automated world, we believe that real food needs a soul. Our products have been carefully developed and defined as a business over the years.
Our cheeses are not made using artificial intelligence. They are produced by hardworking people who have families, most of whom are from right here in the area, near Alba County.
Our team is made up of people who truly believe in the work they do and do it very well.
Products of childhood, present on today's tables
When we say De Colțești (or Torockoi, the name behind our story), we take pride in those authentic products that have accustomed you to quality over time:
Authentic sour cream: We are talking about that good, true sour cream that you have found on store shelves and in your homes for years.
Apuseni cheese: A cheese loved by all generations, from children to the elderly.
Local values, national mission
We strongly believe in local businesses. Like many other domestic businesses, we face various constraints and challenges, but our primary desire is to bring good products to the market for Romanians. For us, success is not measured only in numbers, but in the values that define us:
We value fairness and integrity in our relationships with people above all else.
We are guided by mutual respect and believe in the ability of people to grow alongside us.
Thank you for all your appreciation, for encouraging us, supporting our products, and standing by us! Next time you enjoy our dairy products, we invite you to think of the Trascău Mountains. And, why not, we look forward to welcoming you to visit the Colțești area, to see that double sunrise with your own eyes, and to feel the magic of the place!

In a world that seems to be in an ever-increasing rush, we, at De Colțești, have chosen to maintain the steady pace you have become accustomed to. At the foothills of the Trascău Mountains, beneath the gaze of the Piatra Secuiului, time is still measured in patience, and quality is achieved without shortcuts.
For over 30 years, our family has brought to your tables carefully aged cheeses and feta made "the way it should be." However, because we know how much it matters to have clean food even on busy mornings or when you are always on the go, we decided it was time to take a new step.
That is how our new trio of fresh products was born, a natural extension of our heritage: Yogurt, Sana, and Kefir.
More than a snack. A longing for home.
When we created these products, we wanted to encapsulate in a bottle that exact feeling of peace from the good old days. We set out to offer you an escape into nature with every sip, a taste to remind you of simple things made from the heart. Because, as we like to say, this goodness is not just milk - it is the longing for home.
What makes these products truly special?
100% Romanian milk: We work with the same local farmers in the Apuseni area whom we have known for decades. Simple people who have a deep respect for the land and their animals.
Clean recipe, no compromises: We have not changed any of our principles. We have used natural ingredients, maintaining the simplicity that defines us.
The ideal percentage – 3% fat: Whether you choose Yogurt, Sana, or Kefir, we have kept a 3% fat level. It is the perfect balance for an incredibly creamy, rich, and satiating texture.
Bottle format: We packaged them so you can take them with you anywhere. They are your dose of pure energy for breakfast, for a quick break at the office, or for an outing in the fresh air.
Which one do you start your day with?
The morning dilemma has just become much more delicious. Whether you prefer the classic balance of Yogurt, the velvety texture specific to Sana, or the slightly tangy and refreshing taste of Kefir, you have the guarantee of the same De Colțești standard of excellence.
We know it’s hard to stop at just one, so we encourage you to test them all and tell us which one has become your favorite.
The De Colțești product family now awaits you directly in our online store. We invite you to bring the freshness of the mountains straight to your fridge.

About the mistakes that helped us grow. How we learned to listen to time at De Colțești
We live in a world that teaches us to hide the moments when we fail. We are asked to always show only our successes, only perfectly calculated decisions, and days full of sunshine. But at the foot of the Trascău Mountains, nature has completely different rules. Here you quickly learn that nothing good and lasting is born without trials, without missteps, and without the humility of admitting that you are not the one setting the pace.
Looking back at the journey we have traveled, we realize that we are not defined only by our successes. We are, in large part, the sum of all the things we did wrong but from which we chose to learn. Today, we want to speak to you with an open heart about the errors that forced us to be better.
The product born from a "delay"
The most beautiful lesson the mountain has given us is that some mistakes are actually blessings. Let’s take the example of one of the most beloved products with personality in our portfolio: Puturoasa de Trascău.
When we first created it, the market wasn't ready. There was no great demand for aged cheeses with such an intense and complex character. Commercially speaking, it seemed like a strategic error. Due to a lack of demand, the pieces of cheese remained on the shelves in the aging room much longer than we had originally planned. It seemed we had produced something that would not find its place.
But left there, in silence, the cheese continued to breathe and transform. That "wasted" time gave it a buttery texture and a depth of flavor that no mathematically calculated recipe could have achieved. When it finally reached people's tables, it was a revelation. That calculation "mistake" actually created an iconic product. It taught us that when you rush to sell, you lose the essence. And cheese, just like people, needs time to show its true character.
When our plan didn't match the one on the plate
Over the years, we have released products from our factory that we thought were intended for a specific purpose. We thought of a precise moment of the day or a clear recipe in which they should be used. Sometimes, we admit, we didn't calibrate them perfectly from the start. We wanted a certain flavor profile and achieved something else.
Yet, it was these very products, created with one intention, that ended up being used by you, our community, for a completely different purpose. You discovered a different meaning for them and loved them exactly for those "imperfections." That’s how we understood that milk is a living organism, which varies with the climate, and our rigor must also leave room for surprise. We learned not to be stubborn about controlling nature in the smallest details, but to let it express itself.
The maturing of a team
It isn’t just our cheeses that have matured over these years, but us as well. We made hasty decisions, hit our own limits, and lost sleep searching for answers. But every piece of cheese that didn't turn out right pulled us by the sleeve. It taught us immense respect for the work of the farmers from whom we collect milk and for the sharp air that surrounds us.
If everything had gone perfectly from day one, we would just be another factory where things are done on an assembly line. As it is, we have become a community of people who know the value of something repaired, understood, and made again, with more care.
We are not perfect, and most likely, we will make more mistakes. But we are always honest in everything we put on your table.
Thank you for being patient with us, for understanding our searches, and for staying by our side. After all, the best things in life need time, courage, and a few good mistakes to become perfect.

Focșani Cream: The story of the taste that refused to disappear
Some tastes never grow old. And the people who choose to share them with their loved ones, even less so.
There are moments when food ceases to be merely a sum of ingredients or a biological necessity and becomes pure memory. It becomes about who was sitting next to you at the table, what day of the week it was, how the light fell through the window, and how the air smelled in the kitchen. Crema Focșani is, undoubtedly, one of these gastronomic rarities.
If you grew up in Romania, you probably already know that unique sensation: someone opens a box or unwraps a carefully packed parcel, and suddenly, you feel a shiver. You recognize the smell instantly. You’ve felt it somewhere, sometime. At grandma’s, in the entryway of the house, on a summer morning. In a hurry, on a slice of fresh bread, before running off to play.
Crema Focșani is that cheese you don’t need to explain. You recognize it from a single spoonful.
A history of simplicity: From the sheepfolds of Vrancea to the state nomenclature
To understand the depth of this product, we must go back in time a little. Crema Focșani is not a modern laboratory invention, nor a concept born from a marketing strategy. Its roots are firmly planted in the ancestral tradition of shepherding on the mountain slopes of Vrancea.
History records that, initially, shepherds and farmers in the Focșani area sought a method to transform aged sheep’s milk cheese (caș) into a preparation softer, finer, and creamier than the classic "brânză de burduf." Their solution was as simple as it was brilliant: aged sheep’s milk cheese was finely crumbled, softened with fresh, fatty sour cream, and kneaded extensively with salt until all the noble fats transformed into an unctuous, spreadable, and dense paste.
During the 60s and 70s, the product was standardized and included in the official nomenclature of dairy specialties in Romania. In an era when standardization cut away at the personality of taste, Crema Focșani remained a rare and highly sought-after delicacy. It was not a volume product; it was a prize.
Those who lived through those times certainly remember: when a fresh batch arrived at the grocery store, no radio or newspaper advertisement was needed. Vendors would simply stick a plain, handwritten note on the display window: "We have Crema Focșani!". People would head toward the shelf as if guided by remote control. That note wasn't a commercial announcement. It was good news, and in the Romania of those years, good news was shared immediately with neighbors and family.
Why is it special today? A manifesto for informed consumption
Simple in ingredients, yet extremely profound in taste. That is how all things that have patience in them are. In essence, Crema Focșani is a living food, a direct investment in our primary nutrition.
The slow production process means we don’t use technological shortcuts. The noble protein in the sheep’s milk and the pure fats become, through kneading and natural aging, highly bio-available — meaning they are easy to digest and rich in nutrients that nourish the body from the inside out. In the century of speed and ultra-processed packaging, it remains a benchmark for parents who read the label and make conscious choices for their children.
Joining the De Colțești family
In 2017, we looked at the Romanian gastronomic landscape and realized that this legendary taste risked disappearing forever, swallowed up by industrial cream cheeses full of stabilizers and thickening gums.
We felt we had a moral duty toward our identity. We decided to bring the old recipe back to life and integrate it into the De Colțești family, under the foothills of the Trascău Mountains.
We changed nothing of what made it sacred: we kept it pure. Only pure sheep’s milk cheese, fatty sour cream, and salt. No additives, no preservatives, no compromises. The same gentle, slow process, the same full taste that nostalgic people have been searching for in markets for decades. Since then and until today, it has remained one of the products people always return to. Not once, but every time they want to put the certainty of quality on the table.
Good food has memory. And it asks to be shared.
This is a truth that sometimes, caught in the daily hustle, we forget: truly good food is not eaten alone. Not because you physically couldn't, but because you simply feel you wouldn't want to.
Crema Focșani has a specific weight of its own — it has the gift of calling people together. When you open a box, the first impulse is to turn to the one next to you and say: "Here, have a taste." In that moment, the meal takes on another meaning. It is no longer a lunch taken in a hurry, in front of a cold screen. It becomes a moment of peace, a space for connection.
Our grandmothers spread it with a spoon over steaming polenta. Mothers stirred it carefully into pasta, rolled it into savory crepes, or placed it over potatoes baked in embers. Every family found its own recipe, its own harmony. But we all have one precious detail in common: someone, sometime, put this taste in front of us for the first time. A loved one. A steady hand. A warm gesture.
At De Colțești, we firmly believe that the future is built on the foundation of things that leave a mark on the soul. We brought Crema Focșani back into the present because we knew that somewhere in this country, someone was still longing for it.
Maybe that someone is you. Or maybe, this weekend, you will place it on the table in front of someone who thought it lost to history and who will realize, with the first spoonful spread on bread, that some memories never fade.
What memories do you have associated with the taste of Crema Focșani? 🌿 We invite you to rediscover a piece of our culinary history. The product is available on our website, ready to bring peace to your home: [See the product in our online shop]
